  • Khorasan wheat and ancient seeds bread
  • Yellow, red and grained cherry tomatoes
  • Cocktail tomatoes
  • Cucumber
  • Currants
  • Pine nuts
  • Burrata cheese
  • Basil
  • Apricot or peach quarters
  • Coriander sprouts
  • Marinade of lime, olive oil, salt and pepper

  • Slice the bread on the bias to obtain slices about 1.5cm thick.
  • Drizzle olive oil over the slice of bread.
  • Toast one side of the slice of bread in the oven on the grill setting for about 5 minutes.
  • Slice the cocktail tomatoes and cucumbers.
  • In a large salad bowl, combine the cherry tomatoes, cocktail tomato slices, cucumber slices and redcurrants.
  • Cut the peach or apricot into quarters.
  • Add the apricot or peach quarters, torn fresh basil leaves and coriander shoots.
  • Add the Burrata quarters to the salad.
  • In a small bowl, prepare the marinade by mixing the lime juice, olive oil, salt and pepper.
  • Drizzle the marinade over the salad and toss gently to coat all the ingredients.
  • Sprinkle the lightly toasted pine nuts over the top of the salad to add a crunchy texture.
  • Serve the salad with slices of toasted bread on the side.
  • If desired, transform this salad into generous slices of bread.
